    A gelatinous cube. One wrong turn in a dungeon and the minotaur runs into a cube and is engulfed. Sure, in the wild, the minotaur has a huge advantage, but cubes are dungeon dwellers for the most part.

    It's a trick question, the real winner is the necromancer who set up the dungeon in the first place! The cube stays fed, healthy & growing plus undead minotaurs are as effective as living ones with the advantage of less ongoing expenditure for supplies required in the downtime between adventuring groups & they're significantly more tractable too.

    It would, at first appear, that the charging minotaur would be engulfed in the gelatinous cube, whereupon the minotaur would be dissolved, ending in death. But, the bones of the Minotaur do survive, even until a Minotaur shaman, with the abilities of the dark art of necromancy, slays the gelatinous cube and raises the skeletal remains of the minotaur to live, undead, for eternity; resulting in a bittersweet but final victory for the minotaur.

    Minotaur so long as it is using two oversized battle axes so it can chop the cube into bite sized chunks.
