1) can monks use finishing moves while having a weapon equipped? (Assuming they are centered with it).
2)Does the Unarmed Strike feat affect weapon damage too? (Again, assuming the monk is centered).

1) Yes, though some don't work with ranged weapons.
2) No.

Dark-side finishing moves (ones involving the Fists of Darkness feat) are attacks that work when armed with melee weapons or unarmed. (Bows and shuriken don't count.)
Light-side finishing moves are area-of-effect buffs which don't require a target.

In both cases, you must be unarmed or armed with a weapon that keeps you centered to use any finishing move.

The Unarmed Strike feat only affects you while using handwraps or nothing at all in your weapon slot.
