There is a way or an ''escamotage''
to be centered with exotic weapons like Kopesh or bastard swords ?

what feats you usually gets to make a build with at least 9 levels monk
and using two weapons fight with kopesh or bastard swords ?

You can do it with 8 levels of Fighter(need greater weapon Focus) taking the Kensai enhancement path

One With The Blade: Your melee Focus weapons are considered Centering. While Centered, you may gain various benefits from levels in Monk or as a Grandmaster of Flowers.

so now having these weapons considered monk weapons, can you use stunning fist with them?

Nope. You can't use stunning fist unless you're unarmed...no weapon, or handwraps. You CAN, however, use almost everything else with a weapon in your hand...including, but not limited to, Quivering Palm! :D

Quivering Palm is L15 so its not there with 8 Fighter levels.
