Can some1 tell me after using a greater heart of wood, do you still keep the +2 stat from +2 tome that was already used?

Thanks in advance.

Yup. any tomes you ate. +1 +2 +3 +4 will apply at the min lvl of the tome when you hit that level again.

Yes, the above works to your advantage. If you, say, eat no INT tomes until you get a +4 INT while raiding at L20, and later GR, then that tome gives you +1 at L3, +2 at L7, +3 at L11 and (presumably) +4 at L15.

End result: You get ~18 extra skill points during the level up process compared to before the GR, assuming comparable base points for your chosen class progression. This can also roll over into meeting base ability stat prerequisites earlier in order to work your feat selection to something more favorable. If you're in the boat where choices are tight, run it through the planner.
